I call this, Italian soul food. There’s many ways to make beans and escarole, I have a few different ways of making it depending on my mood but this is one of my mother’s favorite ways and something about a handful of cherry tomatoes and a few leaves of basil just transforms this into something special. Immediately makes you think of summer but yet still gives you all this comforting cozy vibes. It’s such a staple in my kitchen and always has been. RECIPE: 2 tbsp of extra virgin olive oil Pinch
